We are a small Cottage Foods home bakery located in Altamonte Springs (32714) Florida with a primary focus on artisan sourdough baked goods. We currently enjoy our limited capacity as it allows us to really feel connected to our customers, but we look forward to a "carefully scored expansion". We use high quality ingredients and never use preservatives in our breads. Our bakes benefit from the incorporation of fresh homegrown ingredients like: pumpkin, peppers, and more, all organically grown in our very own backyard garden. Because we are baking for our family, friends and health, it is important that we use high quality ingredients.

SOURDOUGH CULTURE

In the culture of sourdough it is common to name your sourdough culture. I think because it is a living thing, like a pet, you have to keep it alive and healthy, so if you name it you’re more likely to care for it? Anyways, our Sourdough Starter is named Rye-ly Cyrus, so named because her godmother (parent culture) was Doughlly Parton. Did I mention that it is also common to be punny with the names? Rye-ly is a member of the Fortissimo-Baking family; she lives on the kitchen counter (Counter Culture) and gets fed twice daily with high quality flour, keeping her Happy and Healthy.

A graphic designer by trade, my background is that of an artist: drawing, photography, digital, sculpture, video, music, etc. I became interested in sourdough bread from an artistic perspective. Recently inspired by a dear friend who is a potter, I thought I could bring similar glazing and staining techniques to baking, and really bring something new and creative to boring old bread. Little did I know the incredible level of artistry that existed in sourdough baking, WOW! I know now, and I am humbled and excited to continue learning, growing and sharing my creative journey with you.

SAFETY

While not required in Florida for a Cottage Foods business, we feel like it is the very least we can do to be educated and up to date on Food Safety and Best Practices for food production, handling, storage and sanitation. To that end, we have gone through training and certification for the SafeStaff (ServSafe) Food Handler Certificate, which is Florida DBPR approved Food Employee training for food safety best practices that meets Florida Statute 509.049 requirements. We have taken these extra steps to educate ourselves to insure that we are using the most up to date information and techniques to maintain a safe and healthy work flow from start to finish, because we are baking for ourselves, our family and friends of all ages. And we want you, the customer, to feel comfortable knowing that the food we are preparing for you is being properly and safely handled in the preparation of your delicious baked goods.

HEALTHY

Did you know that Sourdough bread can actually be good for your health?
Sourdough is good for your digestive system, not because it has live bacteria like yogurt or fermented pickles, those bacteria, both good and bad are killed during the bake. However, the dead bacteria leave behind useful compounds known as postbiotics that can still be beneficial to digestive health. As well, the sourdough fermentation process has a "pre-digestion effect" where the fermentation process breaks down gluten and complex carbohydrates into simpler more easily digestible forms which can be beneficial for diabetics and those with mild digestive issues. In addition, for pre-diabetics and diabetics it can also lower the glycemic response compared to regular store bought bread. The fermentation also reduces phytic acid which improves the body's ability to absorb minerals, like zinc, magnesium, and iron.
